Ok, my fav is a little lame: Big bowl of berries with a splash of soy or almond milk on top. I LOVE IT!
Here’s another that I love:
Chocolate Smoothie
1 large frozen banana
1 TBS ground flax seeds
couple of strawberries
1-2 TBS nut butter of choice
1-2 ice cubes
chocolate to taste
Blend it all up and sluuuuuuurp!
I tried to avoid it but I, too, have succumbed to cupcake mania. I’d love to win!
My favorite dessert is good ol’ apple pie. Simplest thing in the world to veganize. Take your favorite apple pie recipe and use vegetable shortening for crust, if needed, and Earth Balance “butter” spread for filling. Done!
Close second is carrot cake with coconut frosting. Hmmm, that would make an awesome cupcake.
I was first treated to cupcakes from this book at a New Year’s party this year. They were so unbelievably good that I went right out and bought a copy for my best friend. And while it’s always better to be treated to cupcakes baked by others, I really need a copy for myself so that I, too, can treat and amaze.
I am a huge french toast fan (what’s better than french toast and relaxing in pajamas on a Sunday morning?) and here’s my favorite vegan french toast recipe:
1 c soy milk, rice milk, or almond milk
2 tbsp flour
1 tbsp sesami tahini
1 tsp of vanilla (unless you are using vanilla soymilk)
a dash of maple syrup – if you like- I find most soymilks are plenty sweet enough already cinnamon, nutmeg, allspice, cloves, any other flavor you wish to add
Mix it all together, dip the bread in and then crisp on both sides in a pan and viola – enjoy!

I absolutely love the vegan chocolate cake from the Moosewood cookbooks. Everytime I make it people are shocked at how simple it is to make while being super delicious.

Count me in! We like strawberries over sweetened taco chips I make in the oven with brown sugar.
My favorite vegan dessert is peaches in honey. I cut up peaches into wedges, drizzle honey on them, add a tiny bit of cracked pepper, put them on a stick and put them in the freezer while we have dinner. Then, while hubby’s clearing the table, I arrange the peaches on the sticks in a shallow vase and we nibble away on the back porch. Yum!
My favorite vegan dessert is vegan Creme Brulee! Delish..

i love this contest! i’m not vegan, but my fiance is— we keep a vegetarian household, and i’m always on the look out for good vegan dessert recipes. my absolute favorite (and a total crowd pleaser) is actually from chooseveg.com:
Pumpkin Cheesecake
* 12 oz. firm silken tofu, pureed
* 8 oz. nondairy cream cheese (try Tofutti brand at Tofutti.com)
* 1 cup canned pumpkin
* 1 cup granulated sugar
* 3 Tbsp. flour
* 1/2 tsp. ground ginger
* 1/2 tsp. nutmeg
* 1 1/2 tsp. cinnamon
* 1/8 tsp. salt
* 1/4 tsp. baking soda
* 1 prepared graham cracker crust
Preheat the oven to 350°F. Purée all the ingredients except the pie crust in a food processor and pour into the graham cracker crust. Bake at 350°F for 50 minutes. Allow to cool for 30 minutes, cover with plastic wrap or the top of the pie container,

I am a sucker for mangos and sticky rice. I get it at my favortie Thai restaurant, but when I make it at home I just use jasmine rice and put that in a bowl, slice the mango onto the top, and pour on some coconut milk. Yummy and so simple!

I am a vegan, but my family, friends, and boyfriend are not. My friends are really open-minded to cruelty-free dishes, but my family generally is not. So on holidays, I really like to push their boundaries and surprise them with truly delicious food.
As far as desserts go, Vegan Carrot Cake is sublime! I made it for Easter and my carnivorous family just could not believe it was vegan. I made them as both cupcakes and one smaller full sized cake, just to get the joy of slicing it up. I basically followed this recipe posted here with a few minor changes. Instead of Ener-G for an egg substitute I used bananas. (1/2 banana=1 egg). Also, I did not add chopped nuts this time, but I think I will next time. It was so incredibly moist and delicious it was gone in less time than it took me to grate the carrots!

I would have to say that my favorite recipe is sweet potato casserole. I love sweet potatoes and the mixture of brown sugar, milk and eggs. It’s easy to make and nutritious, especially the lesser amounts of sugar you add.
I would love to tell you, but have just recently became Vegan. I have had some brownies that I liked but short of that sweets have not been my favorite. Please inlcude me in your giveaway.

I’m vegetarian, not vegan – but I had to go vegan while breast feeding my first child. She had a dairy intolerance. So I was always searching for vegan treats. My favorite was this brownie mix that I can’t find anymore! They were great and had NO dairy or eggs or soy. I used canola oil to mix them.

Giant Old-Fashioned Oatmeal Cookies
1 Cup vegan margarine, softened
1 Cup Brown Sugar, packed
3/4 Cup Sugar
2 tsp Vanilla Extract
Egg replacer for 2 eggs
1 1/4 Cups Flour
2 tsp Cinnamon
1 tsp Baking Soda
1/2 tsp Salt
3 Cups Oats (rolled)
1 1/2 Cups Raisins
1 cup chopped walnuts (optional)
Preheat oven to 350°F.
In a large mixing bowl, beat margarine, brown sugar, sugar, and vanilla until light and fluffy. Add egg replacer eggs and beat until well blended. In another bowl, combine flour, cinnamon, baking soda, and salt. Gradually add to margarine mixture until well blended. Stir in oats, raisins, and nuts (if using). On a baking sheet lined with parchment paper (or a nonstick cookie sheet) drop the dough by 1/4 cupfuls and pat down slightly. Bake for 15-17 minutes or until edges begin to brown. Let stand for 3 minutes before removing from baking sheet.
Makes 2 dozen giant cookies
I received Veganomicon as a wedding present and it is FABULOUS.
One of my favorite desserts is my mother-in-law’s cranapple cake. It has bursts of fresh, tart cranberries, soft apples and crunch walnuts. I hope I have some cranberries left in my freezer!
My favorite recipe bowls over anyone who tries it: It’s a vegan recipe that I found in the book “Health by Chocolate”. It’s called “Quick Creamy Chocolate Avocado Custard”, and as you can imagine, it’s creamilicious. I’ve seen the cupcake book before and have wanted to try it out, and I think if anyone likes that book, they’ll probably enjoy this one as well.

From the Babycakes cookbook: Triple chocolate Fat pants Cake—Ridiculous!!! So lip smacking, fat pants here I come good!
vegan rice pudding
* 1/2 cup white rice
* 4 cups soy milk
* 2 tsp vanilla extract
* 1 tsp cinnamon
* dash of nutmeg
* 1/4 cup sugar
* 1/2 cup raisins
Preparation:
Preheat the oven to 275 degrees.
Mix all ingredients in a bowl and place in a 1 1/2 quart lightly oiled ovenproof dish. Bake, covered, for 3 hours, or until the pudding sets
I took my favorite chocolate chip cookie recipe and made it vegan using the ground flaxseeds and water for eggs, replaced the chocolate chips with carob chips and added chopped pecans. The secret to making them come out perfect is to refrigerate the dough, then roll into balls and slightly flatten and bake in convection oven for 8-10 minutes. They are perfectly shaped, soft, chewy and the carob chips hold up beautifully! My husband loves them!
I know I’m late for the giveaway, but I want to say that books like these need more exposure! Its so hard to find! Plus, vegan cupcakes taste 100 times better than any other cupcake I have EVER had in my life.
